Mexican franchise restaurant eyes new sites in Coventry as business expands

A Mexican fast-food chain is considering locations in Coventry as it prepares to enter the West Midlands. Zambrero intends to establish 12 outlets over the coming three years, which would generate 180 employment positions across full and part-time contracts. Coventry has been listed alongside Leamington Spa and Stratford-upon-Avon in Warwickshire as prospective areas for development. Since debuting in the capital back in 2021, the company has grown to operate 14 branches throughout Britain, with sites in London, Manchester, Birmingham, Reading, Essex and Glasgow. The menu features Mexican cuisine described as promoting wellbeing, including burritos available in traditional or toasted varieties, tacos, quesadillas and loaded nachos. Diners can select from fillings such as salad, cheese, pulled pork, chipotle chicken, barbacoa beef and vegetable chili, along with various sauces. To drive this expansion forward, Zambrero has brought on board James Fleck, Michelle Jelfs and Sarah Preston as development agents. Fleck expressed enthusiasm about joining the brand during this crucial growth phase, noting his extensive background in the hospitality sector had shown him that Zambrero differentiates itself through quality ingredients, contemporary restaurant aesthetics and a constructive company culture. He stated the team is searching for driven, dedicated individuals with aligned values to become franchise operators as the brand spreads across the West Midlands, presenting an exceptional chance for both first-time and seasoned franchisees—whether operating single locations, multiple sites or corporate entities—to align with an emerging international brand.
